With olive pomace as raw material, the olive pomace polyphenols was extracted and purified by microwave–assisted technology. Single factor method and orthogonal array design were used to optimize the extraction process of olive polyphenols. The optimum parameters were as follows: liquid-solid ratio 20mL/g, microwave time 2 min, microwave power 200W and ethanol concentration 50%. Under these conditions, the yield of polyphenol in olive pomace was 0.97%. Comparing the purification effect of 5 kinds of macroporous resin on the crude extraction of olive phenol, the content of olive pomace polyphenol increased to 80% after the purification of AB-8 macroporous resin.%以油橄榄果渣为原料,利用微波辅助技术提取油橄榄果渣多酚并对其进行纯化研究.通过单因素和正交试验优化橄榄多酚提取工艺,最佳优化工艺参数为液料比20 mL/g、微波时间2 min、微波功率200 W、乙醇体积分数50%.在此条件下,油橄榄果渣多酚得率为0.97%.对比5种大孔树脂对油橄榄酚类粗提物的纯化效果可知,经AB-8型树脂纯化后油橄榄果渣多酚含量可提高至80%.
