黄肉甘薯糖蛋白的抗氧化作用研究

         

摘要

为深度开发薯类产品,以黄肉甘薯为材料,探索其糖蛋白的抗氧化作用,以期为甘薯产品的开发提供一条新的思路。经水溶浸提、乙醇沉淀、脱游离蛋白和透析等方法,从甘薯中提取糖蛋白;并研究了其对O2-˙、·OH和H2O2的清除能力,及其还原能力和对食用油脂的抗氧化作用。实验结果表明:黄肉甘薯糖蛋白对邻苯三酚自氧化产生的O2-˙、Fe-H2O2体系产生的·OH和H2O2具有较高的清除活性,并具有较好的抗食用油脂氧化作用和还原能力。以上活性都与糖蛋白的浓度呈一定的量效关系,表明黄肉甘薯糖蛋白拥有良好的综合抗氧化能力。%For the depth exploitation of potato products,yellow flesh sweet potato was used as the material in this study,to investigate the anti-oxidation activities of sweet potato glycoprotein,to provide a new train of thought for the exploitation of the sweet potato products.Glycoprotein was extracted from sweet potato by water soakage ,etha-nol precipitation,removal of free protein,dialysis and et al.;and investigated its cleanup capacity to O2-˙,· 0H and H2O2,and its antioxidative capacity to edible oil and reduction ability.The results showed that sweet potato glycoprotein has good scavenging capacity to O2-˙induced by the self-oxidation of adjoining pyrogallol,·0H pro-duced by Fe-H2O2 system and H2O2,and good anti-oxidative capacity to edible oil and reduction ability.All above activities enhanced with the amounts of glycoprotein increasing,indicating sweet potato glycoprotein pos-sessed good integrative anti-oxidation capacity.
