摘要

In order to attain a high physical stability polyphenols are partially removed by adsorption onrnpolyvinylpolypyrrolidone (PVPP). To investigate the need of reducing polyphenols in beer byrnPVPP the nanoESIchip-Q-TOF-MS operated in negative Ionisation mode has been introducedrnfor structural elucidation of the compounds responsible for the turbidity in beer. The turbidityrnhas been resolved with a special method. Under defined parameters and MS/MS experimentsrna high number of hop and glucan compounds, but astonishingly no polyphenols could berndetected in the turbidity. The result of the study shows us to think critical about the use ofrnpolyvinylpolypyrrolidone in brewery process.
