In order to attain a high physical stability polyphenols are partially removed by adsorption on polyvinylpolypyrrolidone (PVPP). To investigate the need of reducing polyphenols in beer by PVPP the nanoESIchip-Q-TOF-MS operated in negative Ionisation mode has been introduced for structural elucidation of the compounds responsible for the turbidity in beer. The turbidity has been resolved with a special method. Under defined parameters and MS/MS experiments a high number of hop and glucan compounds, but astonishingly no polyphenols could be detected in the turbidity. The result of the study shows us to think critical about the use of polyvinylpolypyrrolidone in brewery process.
