The situation of utilization and development of marine resources was briefly introduced, especially for the study of functional factors and physiological function of marine fish and shrimp. The physiological functions of each functional peptide from marine fish and shrimp were introduced. The important physiological function of anti-bacterial, anti-hypertensive, and anti-tumor peptides were summarized. There are two kinds of omega polyunsaturated fatty acids, DHA and EPA, in marine fish and shrimp. In humans, they function to protect sight, strengthen the brain and benefit the wit. The chitin and chitosan in marine fishes and shrimps have a lot of functions including enhancing immunity and anti-tumor activity, reducing cholesterol and hemostasis, controlling the transfer of cancer cells, limiting the growth of bacteria and epiphytes, speeding up the concrescence of wounds and so on. There are abundant minerals in marine fish and shrimp, such as Se, Fe, Zn and Cu, which are essential to human health. There are a few of vitamins in marine animals, specifically VA, VD, VE, and VB. Astaxanthin is a natural pigment which can be found in marine animals such as shrimp and crab. It's an important p-carotenoid. It has many functional effects, such as anti-oxidation, elimination of free radicals, prevention of peroxidization of fat, protection of organisms from harm, and prevention of cancers. Furthermore, it can promote the creation of immunoglublin, which improves irnmunity and regulates immune activity. So, the marine fish, shrimp and their by-products can be utilized using modern technology. Extraction of functional ingredients from them, and using them to develop functional foods will provide enormous economical and society benefit.
