Among the monoterpenic alcohols identified as responsible for the particular flavor of Vitis vinifera L., cv. Muscat de Frontignan grape berries, linalool is known to be a key component. To date, the enantiomeric form of free linalool and the presence of a linalool synthase (LIS) activity responsible of its synthesis in this plant have not yet been determined. In the present study, the main results demonstrate for the first time that S-linalool is the principal enantiomeric form biosynthesized in the berry. A good relationship between free and bound S-linalool bioproduction and S-LIS activity time evolution is observed during berry ripening. Not detectable in cells cultivated in vitro, this activity prevails in the berry skin and in adult leaves. The whole of these experimental data is discussed and integrated in the general phenomenon of maturation.
