Harvesting the feedstock for the enormous global dairy food industry, is a major logistical operation, that is traditionally very labour intensive and wherein the central role played by the cow is all too readily forgotten. Interfacing the cow to thedairy food system along with her physiological requirements is a key process and strategies for achieving this vary widely across countries. At the on-ground level, the cow must be conditioned to make her milk available for harvest through her interaction with both the human operator and the milking machine. Further, since bovine milk is processed into human food, there are also serious requirements of the harvesting process and environment, in terms of hygiene, quality and customer perception.
