A HACCP system including critical control points (CCPs), critical limits (CLs), and preventive and corrective actions was implemented for the production of bottled purified water based on the study of the microbiological quality of bottled water in Wuxi, Jiangsu province. The study was done on 288 random samples sold in stores from 1998 to 2001 with reference to the aerobic colony count (ACC), coliforms and mould contamination. The results showed that 78.5% of the purified water was qualified according to standards, which indicated that ACC and mould were the mam factors affecting the microbiological quality of the purified water especially in summer. Comparison made between the pre- or post-implementation indicated the HACCP system is effective for improving the microbiological quality of bottled purified water.
