The present invention relates to a method for producing decaffeinated coffee and to decaffeinated coffee thus prepared, comprising the steps of: (S1) putting green coffee beans in hydrogen water and soaking for 23 to 25 hours; (S2) repeating the process of step (S1) 3 to 5 times; (S3) inoculating and fermenting the coffee beans obtained above with lactic acid bacteria; and (S4) drying the fermented coffee beans and then roasting to obtain decaffeinated coffee. It can effectively reduce the caffeine content of coffee by efficiently dissolving caffeine while reducing the dissolution of coffee. In addition, by fermenting coffee beans with reduced caffeine content using lactic acid bacteria, the taste and aroma of coffee can be applied to coffee again, and beneficial ingredients are added to coffee while improving the taste of coffee due to fermentation by lactic acid bacteria can do. Therefore, according to the present invention, it improves the arousal, cardiac arrhythmia and diuretic problems caused by large amount of caffeine intake, and by lactic acid bacteria fermentation, the coffee flavor and aroma are maintained as it is, and beneficial ingredients are contained in the coffee, so that caffeine is burdensome for pregnant women and the elderly.
