The present invention relates to a method for producing shiitake mushrooms having an increased vitamin D2 content, and more particularly, to: (1) a first step of pre-aging the shiitake mushrooms at a temperature below room temperature; (2) a second step of main aging the pre-aged shiitake mushrooms at room temperature; (3) a third step of chopping the matured shiitake mushrooms; (4) a fourth step of irradiating the sliced shiitake mushrooms with UV-B; (5) a fifth step of heat-treating the shiitake mushroom pieces irradiated with UV-B; and (6) a sixth step of pulverizing the heat-treated pieces of shiitake. When the shiitake mushroom is manufactured according to the method of the present invention, the vitamin D2 content is increased by 60 times or more compared to the conventional method, and it is possible to manufacture a finished product with a low number of bacteria and safety without using any organic solvent.
