Rye bread dough is mfd. in a three stage system, with a plant having (1) chambers with doors arranged one above the other in pyramid form; (2) a shaft passing through all three chambers, carrying the kneader blades; (3) slide plates forming the dividing walls between the chambers, and moved automatically; (4) temp. control by a piping circuit in the outer walls; and (5) automatic charging of flour and water into the separate chambers. Chemical additives are not needed; the taste is improved and the bread does not go stale so quickly.
