A bakery machine is for kneading dough pieces in a circular motion between two endless flat conveyor belts. The belts are arranged edge to edge with their active surfaces at an angle to form a 'V'-shaped trough in which the dough pieces are kneaded as they are advanced along the trough. The frame of one conveyor belt is now linked to a rotary eccentric which displaces the frame in a circular motion perpendicular to the surface of the belt. The edge of the belt at the inner part of the 'V' is protected by a shaped kneading bar which moves with the conveyor belt frame. The centre line of the 'V' is pref. inclined to the horizontal by less than 90 deg. and more than 20 deg. with the centre line of the 'V' set at between 40 and 50 deg. Pref. about 45 deg. to the horizontal, the faces of the two belts are symmetrically inclined on each side of the centre at an angle between 30 and 40, pref. 35 deg. Pref. both conveyor belt drives are reversible, as is the eccentric drive. A common switch may be wired to reverse all three drives simultaneously. Adaptable to knead satisfactorily both wheat based and rye based doughs as well as those based on wheat mixts. and rye mixts. Also readily adjustable for a range of sizes of dough pieces.
