PURPOSE:To steam a food to be steamed without requiring a heat source cost at a low product cost, by filling a food material in each metal steamer containing hot water below a drainboard, charging the resultant steamer into a confectionary oven in which fire is put out and still in a high temperature state, and steaming the food material. CONSTITUTION:Hot water 8 is poured into each steamer body 3, and food materials 9 to be steamed are arranged on a draining vat 6 and placed on a drainboard 5. The steamer (B) is then covered with a lid 4 and arranged in an oven (A) which is used for confectionary and bakery and still in a high temperature state after putting out fire. The steamer (B) charged into the oven (A) is directly heated at 20-130 deg.C to boil the hot water 8, fill steam in the steamer (B) and steam the materials 9. In this case, steam fills the interior of the steamer (B), but the interior of the lid 4 is similarly heated not to cause dew condensation in the interior of the lid 4. Therefore, no defective food is produced by dropping of condensed dew from the inner surface of the lid 4 onto the materials 9 even if the food to be steamed is for steamed confectionary.
