PURPOSE:To obtain the title food having a texture different from cheese by using the protein separated from whey or protein obtained by concentrating whey as a starting material and extruding the product containing a specific amount of whey protein. CONSTITUTION:The protein separated from whey or the protein of whey concentrate is mixed with unaged cheese to prepare the starting material. The content of the whey protein is 20-85% based on the total protein of the product. The product is directly, or after combined with water, fed into an extruder and extruded out under heating and pressure to give the objective food. The content of the whey protein is preferably about 90% in the protein product separated from whey, while the content in the whey concentrate is preferably more than about 70%.
