PURPOSE: To provide a method of making bun, bread or wheat flour sweet stuffs which can suppress the aging and resists to freeze denaturation. ;CONSTITUTION: Wheat flour dough is prepared by using more than 0.5 pt.wt. of the component rich in gliadin which is extracted and separated from wheat gluten with an aqueous ethanol of less than 30vol.%, and 100 pts.wt. of wheat flour for making bun, bread or wheat flour sweet stuffs.;COPYRIGHT: (C)1996,JPO
