a process for the preparation of a mixture for pasta, whole, rolled, flaked or ground cereals in general, to send to a screw extrusion.including: 1) a phase separation of the raw material in at least two fractions having different size fractions.defined within a range; 2) a stage of control the proportion of these fractions in different grain size by a collection of weight of these fractions with dedicated todevice; and 3) a phase of dosage of these fractions and the dosage of the water for each of these fractions in a ratio variableby means of a first dispenser for solid phase and a second dispenser for liquid phase; (4) a phase of impastamento different for each particle size fraction.also described is a device for implementing this process.one of the advantages of the present invention is to reduce the amount of sugars derived from physical and chemical reactions induced in the phase of impastamento.there is also the possibility of splitting the solid into n subsets, with n greater than or equal to 2, with making attributes defined.a further advantage is the possibility to adjust the time of impastamento every single fractions of different particle size.
