The invention relates to a composition for the preservation of foodstuffs through the removal of ethylene produced by ripening of the said foodstuffs, which comprises the following fundamental ingredients: - potassium permanganate from 4 to 25% - calcium oxide from 0 to 5% - sodium carbonate from 0 to 5% - deionized water from 0 to 10% on a porous granular support having a high specific surface area in relation to its weight and high chemical inertness in relation to potassium permanganate.
