PROBLEM TO BE SOLVED: To prevent the odor of sardines as an inexpensive food having a high nutritive value and the fish paste products made from these sardines and to maintain the freshness thereof. ;SOLUTION: The sardines are immersed into a soln. of 3mg/ml epigallocatechin. In production of fish meat paste dumplings made from the sardines, the fish meat paste dumplings are produced by adding 0.75wt.% epigallocatechin to 100g sardines.;COPYRIGHT: (C)1998,JPO
