PROBLEM TO BE SOLVED: To obtain a meat or meat-like filling material having plasticity, solidi fying into a hamburg steak when heated in a dry state, excellent in flavor and texture, and useful for cooked foods, etc., by cooking meat or a meat-like protein material and then adding a thickener solution to the cooked product. ;SOLUTION: This method for producing a meat or meat-like filling material comprises thermally cooking a meat such as minced meat or granular meat or a meat-like protein material such as granular protein or fibrous protein, and vegetables such as raw vegetables or dry vegetables, for example, at 80-100°C, and then adding a thickener such as gum arabic or locust bean gum (in an amount of preferably 0.01-10 wt.% based on the dry solid content of the filling material) to the cooked product. The water content of the filling material is 50-75 wt.%. The filling material is preferably loaded on a food material and then heated in a state releasing water to produce the cooked food. The heating treatment preferably comprises a dry heating treatment such as a baking treatment, a toasting treatment or a frying treatment.;COPYRIGHT: (C)2000,JPO
