PURPOSE:To obtain a cattle meatlike food material for producing ground meat in high yield, by centrifuging fish meat or cattle meat in the form of picked or minced meat together with a specific amount of water, and having improved color, taste, smell, water holding property and springiness. CONSTITUTION:Water in an amount of 1-10 times, preferably 4-5 times based on fish meat or cattle meat in the form of picked or minced meat and, as necessary, common salt, sodium hydrogencarbonate, phosphate, etc., are added thereto and centrifugation is carried out, preferably at =1,000G centrifugal force using a decanter to provide the aimed cattle meatlike food material.
