PROBLEM TO BE SOLVED: To provide a method for efficiently producing a desalinated low-sodium plum fruit juice using as the raw material plum vinegar as a byproduct formed in the process of producing pickled ume from plum fruits, and to provide a method for producing a plum fruit juice drink with low sodium concentration and high potassium concentration having excellent function as a health beverage.;SOLUTION: This method for producing a low-sodium plum fruit juice is characterized by comprising contacting a desalinated plum fruit juice produced by subjecting plum vinegar to ion exchange membrane electrodialysis treatment with a cation exchange resin with sulfo groups as the exchange groups. The other objective method for producing a plum fruit juice drink is characterized by comprising adding a potassium source to the low-sodium plum fruit juice obtained above.;COPYRIGHT: (C)2002,JPO
