PROBLEM TO BE SOLVED: To provide a method for producing hand-made buckwheat noodles having a good texture and a good keeping quality, and to provide the hand-made buckwheat noodles.;SOLUTION: This method for producing the hand-made buckwheat noodles, having a water-supplying process for adding water to flour for buckwheat noodles to approximately homogeneously impregnate the whole portions of the flour with the water, and then kneading the obtained granular flour to form the large mass, a kneading process for kneading the water-supplied mass to form the ball having chrysanthemum patterns, a settling process for closing the chrysanthemum patterns to form conical navels, and then pressing the conical navels to form the ball having a suitable shape, an extending process for extending the settled ball into a dough having a proper thickness, a knifing process for cutting the dough in a prescribed width to form the buckwheat noodle strips, and a reduced pressure treatment process for subjecting the water-supplied mass or the kneaded ball to a reduced pressure treatment after at least one of the water-supplied process and the settled process.
