PURPOSE:To obtain the titled food having natural and delicious taste and a flavor, by using natural activated water (mineral water) in the kneading and boiling of noodles and using a dipping soup prepared by boiling down dried bonito, tangle, IRIKO (boil-dried small sardine), etc., in natural activated water. CONSTITUTION:6kg of wheat flour or buckwheat flour is kneaded with 3kg of natural activated water and the kneaded dough is boiled in natural activated water. Separately, dried bonito, tangle, IRIKO, coarse fish, etc., are boiled down in natural activated water to obtain a soup stock. The natural activated water may be obtained by treating city water with circulation-type water-filter containing colite, etc., as a filter medium.
