Flavoring materials can be produced from filamentous fungi by contacting water at a temperature sufficient to reduce its nucleic acid content and to concentrate or separate solids from the resulting aqueous solution. The materials can additionally be subjected to a chemical reaction, for example, with a sulfur-containing amino acid.
