The invention also deals with the use of such mold in the manufacture of a food product.;Process for the production of a fermented food product exhibiting cholesterol-lowering properties by inoculating crop material with a mold according to the invention.;Food product with cholesterol-lowering properties containing compound stemming from a mold according to the invention.
