Analysis of liquid components in wine-making, comprising a preliminary calibration stage involving choosing parameters which characterize the quality of a vinification component for analysis, is new. Standard values are determined for each parameter from an infra-red absorption spectrum. A continuous spectrum is taken for each component to be analyzed and the standard values applied automatically. An Independent claim is also included for a device for performing the novel method.
