A composition comprises an edible oil or fat and one or more phytosterols and/or phytostanols, wherein the phytosterols and/or phytostanols are substantially completely dissolved therein by a method in which the phytosterols and/or phytostanols are heated to form a molten material which is then added to a heated oil or fat and the composition so formed is cooled to room temperature.
