The invention concerns devices for evaluating the density of protons present in a given body (100) with possibility of identifying the material constituting the body, whereto the protons belonged. The inventive device is essentially characterised in that it comprises a permanent magnet (1) with two North and South poles (6 and 7), having a longitudinal axis of symmetry (2) and an axis of symmetry (3) perpendicular to said axis (2), two coils (11, 12) arranged on either side of the magnet (1), centred on the axis (2) and symmetrical relative to the plane (3), a radio-frequency electric current generator (4) connected to the two coils (11, 12) so that the radio-frequency electric current feeds the two coils such that the surfaces (13, 14) of the two coils respectively opposite the two poles (6, 7) of the permanent magnet (1) are of the same magnetic type, and a receiver (8) connected to the two coils (11, 12) to analyse the electric signals delivered at the output (15, 16) of the two coils when the generator is disconnected from the coils. The invention is in particular applicable in the food industry to determine the amount of water and/or fat in foods, and in the oil industry to determine the amount of water in the rock surrounding the well, the porosity distribution is said rock and/or its permeability.
