PURPOSE: Technical procedures of modified alternan production and enzyme stabilization at room temperature using the modified alternan are provided which are useful in the filed of cosmetic industry, medicine industry or food industry. CONSTITUTION: Modified alternan is characteristically produced by oxidation of -CH2OH to -COOH of a polysaccharide which is obtained through procedure consisting of separating and purifying alpha-1,3 glucan produced by Leuconostoc mesenteroides CBI-110 and oxidation thereof with NSA(Nitrosyl sulfuric acid). It is oxidized by using NaIO4, separated then purified to obtain a polysaccharide having a molecular weight of 100K or more. The obtained polysaccharide is subjected to immobilization reaction with an enzyme under the particular condition to increase enzyme stability.
