PROBLEM TO BE SOLVED: To provide a method for producing food products, beverage products, seasoned food products or their materials which have a high GABA (-aminobutyric acid) content and good flavor in producing various kinds of food products, beverage products or seasoned food products, comprising fruits, vegetables, fruit juices, vegetable juices, soybean milk, malt juices, or the like, as raw materials.;SOLUTION: The raw materials of the food products, the beverage products or the seasoned food products are mixed with glutamic acid or a glutamic acid-containing substance and a lactic acid strain having -aminobutyric acid production ability, and subjected to lactic acid bacteria fermentation to produce the high-quality food products, beverage products or seasoned food products which have each a high GABA content, good flavor and mainly refreshing sour taste. The method is applied to production of various kinds of food products, beverage products or seasoned food products comprising fruits, vegetables, fruit juices, vegetable juices, soybean milk, malt juices, or the like. The method for producing food products, beverage products and seasoned food products which have each the high GABA content and good flavor and approximately no possibility of exhibiting an unpleasant smell containing a diacetyl smell and impairing flavor to the food products is provided.;COPYRIGHT: (C)2004,JPO&NCIPI
