The proposed method for determining content of polyphenol compounds in fruit and fruit products consists in exposing the fruit sample to action of organic reagents, preparing reference solutions, measuring the optical density of the sample solution and the reference solutions, determining the factor that characterizes the reduction of the activity of polyphenol compounds in the sample by the measurement data, and determining the content of polyphenol compounds in the sample by the said reduction factor. To measure optical density, optical radiation with a wavelength of 670 nm is used.
