PPROBLEM TO BE SOLVED: To provide an exceedingly useful method for processing fishes, in which various kinds of components mixed in environmental water for rearing fishes are efficiently absorbed and accumulated in fish bodies and qualities and tastes of individual fishes are uniformly improved without performing a complicated operation by taking advantage of branchial respiration being vital reaction of fishes in water; and to provide a processed fish product. PSOLUTION: The method for processing fishes, by which qualities and tastes of fishes are improved, comprises dispersing or mixing smoke or a smoke liquid obtained by bringing the smoke into contact with water or an aqueous solution and dissolving smoke components in water with environmental water for rearing fishes under movement, dissolving the smoke components in the environmental water for rearing, absorbing and accumulating the smoke components dissolved in the environmental water for rearing in fish bodies by branchial respiration of fishes to improve qualities and tastes of fishes.
