PROBLEM TO BE SOLVED: To provide a naturally-derived fish odor masking agent capable of reducing the fishy smell of fish and unpleasant odors created during processing, without impairing the original flavor and deliciousness of materials, and a processed fish product using the same.;SOLUTION: A Momordica grosvenori extract used as a sweetener is used as a masking agent for fish odors, and is blended into minced fish or a processed product using it, in a concentration such that no sweetness can be felt.
