The present invention is related to a novel process for manufacturing an amaranth milk or beverage from whole amaranth seeds. The beverage thus obtained has enhanced properties compared to previous art beverages, thereby having a beverage similar to cow's milk, which has improved organoleptic properties and palatability, as well as an improved caloric and nutritional value. The present invention is further related to nutraceutical compositions and the use thereof in healthy people or people suffering from any metabolic disorder.
