PPROBLEM TO BE SOLVED: To provide a manufacturing method of a plum fruit juice, which enables manufacturing of the plum fruit juice containing a large quantity of polyphenol for a short period of time. PSOLUTION: This manufacturing method of the plum fruit juice includes the process (1) of impregnating the plum fruit with a liquid by a vacuum impregnation process or the like, and the process (2) of soaking the plum fruit undergoing the process (1) in a carbohydrate. The plum fruit juice manufactured by this manufacturing process contains a larger quantity of the polyphenol than that by a conventional method and this manufacturing method can extract the plum fruit juice for a short period of time.
