A process for preparing a selenium yeast product for use in food, dietary supplements or drugs, in which said yeast is grown in a minimal medium under aerobic conditions, characterized by the steps of: a) cultivating the yeast, which includes i) supplying nutrients and selenium to the yeast during cultivation in a measure corresponding to the consumption of said nutrients and said selenium in the yeast; ii) that glucose and / or maltose are the only sources of carbon in the nutrient medium; iii) that the concentration of ethanol during cultivation does not exceed 1%, preferably 0.5% and, more preferably, 0.2%; iv) that the pH value during cultivation is maintained between 4.0 and 6.0, preferably between 4.4 and 5.7, more preferably between 4.7 and 5.4, such as 5.0 ; and v) that an aqueous salt of selenium is mixed with the nutrient medium in a corresponding amount between 1000 and 1500 ppm of selenium, calculated with respect to the dry matter in the yeast; b) isolate the yeast obtained in step (a).
