Disclosed is a process for producing a granular low-calorie food material, which comprises the steps of: shaping a composition into granules; and drying the granules, wherein the composition comprises the components (a) to (d) shown below and has a moisture content of 15 to 40 mass%: (a) 50 parts by mass of a starch; (b) 0.3 to 10 parts by mass of trehalose; (c) at least one member selected from (c-1) 0.1 to 15 parts by mass of a gelatinizing agent capable of gelatinizing by the action of a bivalent metal ion and 0.1 to 3 parts by mass of a bivalent metal ion and (c-2) 0.1 to 15 parts by mass of a gelatinizing agent capable of gelatinizing upon heating or cooling after heating; and (d) 1 to 25 parts by mass of a clouding agent.
