A manufacturing method of the dry cuttlefish is provided to maintain the specific condition in order to maximize production of the taurine and the dry cuttlefish powder containing the taurine of the large amount is provided to give the effect of taurine and facilitate additive for food. A manufacturing method of the dry cuttlefish comprises the following steps of: a step disemboweling raw squid; a step firstly drying raw squid until moisture is 20%-30% by maintaining indoor temperature 50deg.C ~ 60deg.C and indoor humidity 40%~50%; and a step which maintains the indoor temperature 15deg.C ~ 22deg.C and indoor humidity 50%~60% in the drying room and inserts the cuttlefish passing through the drying step in the rice straw and which ages the cuttlefish for 72 hours ~96 hours and creates taurine in cuttlefish.
