The method involves filling single molds (11) with a superficial part of a lactic cheese (12), and freezing the superficial part of the cheese in a single mold. The mold is reheated in a manner so as to extract the cheese from the mold simultaneously. The extraction of the cheese is performed by reversing the mold towards bottom of the cheese on a suitable receptacle, where the molds are articulated with each other to form a chain. Independent claims are also included for the following: (1) a device for filling a mold with lactic cheese (2) lactic cheese molding/demolding installation.
