PROBLEM TO BE SOLVED: To provide a method for producing dried apple for solving problems of a method for producing conventional dried apple easy to whiten, and presenting hard texture, and having a fear of causing nonenzymatic browning.;SOLUTION: The method for producing the dried apple includes: retaining under reduced pressure, an apple-containing solution obtained by soaking apple in a trehalose solution in which trehalose is dissolved; impregnating the apple with the trehalose solution; heat treating the apple-containing solution to deactivate browning enzyme contained in the apple; infiltrating the trehalose solution into the apple while giving evaporation treatment of heating the apple-containing solution under reduced pressure to evaporate moisture; and giving drying treatment to the apple impregnated with trehalose.;COPYRIGHT: (C)2011,JPO&INPIT
