摘要

PURPOSE: A method for manufacturing the tomato fermentation product containing GABA, and the food or beverage containing the tomato fermentation product are provided to increase the bioactivity. CONSTITUTION: A method for manufacturing the tomato fermentation product containing GABA comprises the steps of preparing a culture medium by using tomatoes; inoculating the vegetable lactobacillus having the -aminobutyric acid (GABA) production function to the culture medium; and culturing it to produce the tomato fermentation product. The culture medium is prepared by washing tomatoes, pulverizing the washed tomatoes, and sterilizing the pulverized tomatoes at 80-121C for 5-20 min.
