PURPOSE: A method of manufacturing dried yellow croaker slices is provided to maintain taste and flavor of yellow croaker without a fish smell of the yellow croaker by softening the yellow croaker with a roller press after sterilizing and drying yellow croaker.;CONSTITUTION: A method of manufacturing dried yellow croaker slices comprises the following steps: dipping yellow croaker in salt water of salinity of 6% or sprinkling bay salt on the yellow croaker after sorting the yellow croaker; drying the salted yellow croaker to a moisture content of 5 % or less with cold wind; sterilizing and heating the dried yellow croaker in a steamer for 10 ~ 20 minutes; drying the yellow croaker to a moisture content of 5% or less; compressing the yellow croaker flesh with a roller; separating the by-products and flesh from the yellow croaker; and vacuum-packing the croaker fresh.;COPYRIGHT KIPO 2010
