PURPOSE: A process of preparing a dried croaker is provided by treating a croaker(yellow corvina) with a solution of saline water and loess. Whereby, the product has the efficacy of loess as well as an excellent taste and nutrients of a croaker. CONSTITUTION: Loess is added to saline water and left alone for a specified time(for example, 24 to 48hr) and loess is then removed from the liquid. A croaker is salted in the separated saline water. Preferably bamboo salt is used instead of salt.
