PROBLEM TO BE SOLVED: To provide a method for producing parboiled rice, which shortens a time required for wetting treatment without causing cracks in rice grain in a wetting treatment step.;SOLUTION: In the method for producing parboiled rice, since a pregelatinized layer is formed on the surface of raw material unpolished rice by a prepressurization steaming treatment and then wetting treatment is carried out, even if a wetting rate is high in the wetting treatment, the unpolished rice absorbs water at a high speed up to a target water content without causing cracks because the surface of unpolished rice is provided with toughness by the pregelatinized layer.
