PROBLEM TO BE SOLVED: To provide a method for producing parboiled rice, which shortens a time required for wetting treatment without causing cracks in rice grain in a wetting treatment step.;SOLUTION: In the method for producing parboiled rice, since a pregelatinized layer is formed on the surface of raw material unpolished rice by a prepressurization steaming treatment and then wetting treatment is carried out, even if a wetting rate is high in the wetting treatment, the unpolished rice absorbs water at a high speed up to a target water content without causing cracks because the surface of unpolished rice is provided with toughness by the pregelatinized layer. Consequently, in the water absorption treatment, since unpolished rice rapidly absorbs water (high-speed wetting) without aggravating unpolished rice qualities by cracks, etc., a wetting treatment time is shortened and a production time of parboiled rice is made short.;COPYRIGHT: (C)2011,JPO&INPIT
