PROBLEM TO BE SOLVED: To enable the installation of a liquid nitrogen-filling apparatus in a sterile environment to fill a liquid nitrogen into a head space of a container that contains a food but is not sealed yet, and to realize the disinfection of the liquid nitrogen and of a liquid nitrogen-storage tank, a liquid nitrogen channel, and a filling nozzle of the liquid nitrogen-filling apparatus in a simple and inexpensive structure.;SOLUTION: According to a sterile liquid nitrogen-filling method, the liquid nitrogen-storage tank 20, the liquid nitrogen channel 25 leading from the storage tank 20 to the filling nozzle 24, and the filling nozzle 24 are arranged in a sterile environment in a sterile filling system, and are covered with a protective cover 23 that shields the tank 20, channel 25, and the nozzle 24 from an agent or washwater splayed for sterilizing/cleaning the inside of the sterile environment. The liquid nitrogen is filtered through a supply nitrogen-disinfecting filter 28, which is disposed on a liquid nitrogen channel 22 leading from a liquid nitrogen supply source 21 disposed outside the sterile environment to a liquid nitrogen supply port of the storage tank 20, and through a nozzle-disinfecting filter 29 disposed on the filling nozzle 24.
