PURPOSE: Functional food for snack or meal substitutes composed of rice snack, and a producing method thereof are provided to store the functional food for a long time without using an antiseptic. CONSTITUTION: A producing method of functional food for snack or meal substitutes composed of rice snack comprises the following steps: dissolving 3~8parts of vegetable edible oil by weight for 100parts of rice by weight into 20~35deg C water, and dipping rice into the obtained mixture for cooking; spreading cooked rice grains on a flat board, and drying with cool air; compressing the rice grains using a roller compressor; drying the rice grains using a hot air drier to obtain the rice snack; and adding more than two ingredients selected from nuts, dried meat, dried fruits, dried/fermented beans, and dried ginseng.
