Preparing a dough, comprises processing flour (1), bulk water (2), oxygen and other ingredients (3) to a moldable dough by a kneading process (4), and rolling the dough into a dough sheet, where, during rolling, the oxygen added in the kneading process is used for increasing the plasticity of the dough for quicker dough sheet production. An independent claim is included for a device for performing the process, comprising a kneading machine and a bulk water metering device, where a measuring and/or controlling device is provided to control the dosage of oxygen enrichment in the bulk water.
