BLEND POWDER OF RICE FLOUR AND GLUTEN FOR PRODUCTION OF WESTERN-STYLE CAKES, AND WESTERN-STYLE CAKES USING THE SAME

PROBLEM TO BE SOLVED: To provide blend powder containing rice flour for the production of western-style cakes excellently suitable for producing western-style cakes, and to provide excellent quality western-style cakes using the same.;SOLUTION: Adequate amounts of alkali treatment rice flour and freeze drying gluten that are epochally excellently suitable for producing western-style cakes are blended, thereby the blend powder very excellent for producing western-style cakes comparing with the conventional blend powder of rice flour and gluten is provided. The western-style cakes of greatly high quality compared with the conventional one can be produced by using the rice flour blend powder. The western-style cakes obtained by the present method have excellent overall qualities and have especially an excellent volume characteristic (the commercial value is controlled) comparing with the conventional one.;COPYRIGHT: (C)2012,JPO&INPIT
