PROBLEM TO BE SOLVED: To use an endocarp of citrus fruits as food without using an additive to remove bitter taste from the endocarp.;SOLUTION: The production method of a substance containing citrus fruit pericarp includes: a squeezing process S1 for squeezing the fruit juice from the citrus fruits; an exposing process S2 for exposing the endocarp in the squeezed juice residue of the citrus fruits to water for 24 hours or more immediately after squeezing the fruit juice in the squeezing process S1; and a boiling process S3 for boiling the endocarp having exposed to the water in the exposing process S2.;COPYRIGHT: (C)2012,JPO&INPIT
