PURPOSE: A method for producing a rice plant through a molecular breeding is provided to produce an intermediate parent with improved taste. CONSTITUTION: A method for producing a rice plant with improved taste comprises a step of transforming a rice plant with a recombinant plant expression vector containing a gene(OsSbe1(Oryza sativa starch branching enzyme 1)) encoding rice-derived starch branching enzyme. The gene has a base sequence of sequence number 1. The expression vector contains a selection marker. The expression vector contains a promoter which is CaMV 35S, actin, ubiquitin, pEMU, MAS, or histone promoter. A composition for improving rice taste contains the gene, OsSbe1.
